Fit2Go Recipe: How to make the best steak!

WHAT IT IS:

This is the best tasting steak you will ever cook! This is not a low calorie recipe although it is very high in protein and has no carbs! The carbs will come from whatever side dish you choose to have. I recommend oven baked brussels! The key to a great steak is to seal in the juices and flavor by searing each side before cooking. A cast iron skillet and a meat thermometer are an absolute must for the best steak!

WHAT YOU’LL NEED:

  • Two filet mignon steaks (or top sirloin) sized to your liking. For nutrition purposes in this recipe I am using two 6oz filet mignons.
  • You will definitely need a cast iron skillet 
  • You will also need a meat thermometer 
  • Salt and pepper to taste
  • 4 tsp garlic powder divided into 1 tsp portions
  • Old Bay to taste
  • 2 Tsp Kerry Gold butter divided into two 1 tsp portions
  • 1 Tbsp Olive Oil
  • Dash of dried or fresh chopped rosemary (about 2 tsp total- 1 tsp on top of each steak)

INSTRUCTIONS:

 

  1. Preheat Oven to 400 degrees
  2. Pat filet mignon dry
  3. Add salt and pepper to taste, old bay to taste, and 1 tsp garlic powder to each filet mignon and pat it down into the meat and slightly rub
  4. Flip over and do the same to the other side
  5. Heat cast iron skillet over high heat with 1 Tbsp Olive oil in it
  6. You are going to need to turn on your exhaust fan and possibly open a window if you have one in the kitchen- searing meat produces a lot of smoke
  7. After about 3-4 minutes when skillet it at a very high temperature, the oil is very thin and is smoking pretty heavily, pick the pan up and tilt it back and forth spreading the oil evenly
  8. Add the filet mignon and cook until thoroughly seared on one side but not cooked through the middle- about 2-3 min then flip and repeat on the other side
  9. Sprinkle the top of each steak with some fresh chopped or dried rosemary
  10. Immediately place steaks in cast iron skillet in the oven and bake at 400 degrees until it has reached the desired internal temperature. I recommend medium rare- which is 135 degrees F and takes about 10 minutes depending on thickness of the steak. For best results I would check the temperature after 5 minutes then recheck every 2 minutes
  11. Remove steak from oven when it is 5 degrees cooler than desired temperature, add 1 tsp butter to the top of each steak. Let rest in cast iron skillet until it reaches desired internal temperature and serve!
