Fit2Go Recipe: Oven Roasted Brussels

WHAT IT IS:

Meant to be a side dish. I pair it with steak but it pairs well with red meat, white meat or fish!

WHAT YOU’LL NEED:

  • 1/2 red onion sliced into long thin slices as shown in the picture
  • 2 T minced Garlic
  • 1 bag (16 oz brussels sprouts)
  • 2 T Nutritional Yeast
  • Salt and Pepper to taste
  • 1/4 C water

INSTRUCTIONS:

 

  1. Preheat Oven to 425 degrees
  2. Cut the hard ends off of brussel sprouts then cu the brussels in quarters (cut them in half then in half again)
  3. Tear as many leaves off of the brussels as possible leaving a very thin core and toss into a large mixing bowl
  4. Toss in the sliced onions, the salt & pepper, garlic & nutritional yeast and water and mix up
  5. Place on a baking sheet (preferably lined in foil) and spread as thin as possible
  6. Bake for about 15-20 minutes until cooked to liking

 

Some additional ideas / tips:

Drizzle some balsamic vinegar (calories below do not include this)

Turn broiler on at the end for a couple of minutes if you like them crispy! Just keep a close eye on them because the broiler can burn them quickly!
