Fit2Go Recipe: Easy Skillet Garlic Parm Zoodles

WHAT IT IS:

Meant to be a side dish. I pair it with steak but it pairs well with red meat, white meat or fish!

WHAT YOU’LL NEED:

  • 4 small to medium zucchinis
  • 1 small can sliced black olives (2.25oz)
  • 2 T grated parmesan
  • salt and pepper to taste
  • red pepper flakes to taste
  • 1/2 C chicken broth
  • 2 T minced garlic

 

Recommended Kitchen items: (For this recipe you will need knives, a cutting board, a cast iron skillet and spiralizer)

 

INSTRUCTIONS:

 

  1. Cut the ends off of each zucchini and use spiralizer to turn zucchini into zoodles (zucchini noodles)
  2. Heat cast iron skillet over medium-high heat
  3. Add zoodles and chicken broth to skillet
  4. Add salt and peper to taste, red pepper flakes to taste and garlic
  5. Stir occasionally and cook until soft and cooked to your liking (about 10 minutes)
  6. Add black olives and stir
  7. Drain liquid from pan
  8. Add parmesan and stir
  9. Divide and serve

 

Serve with your favorite main dish of seafood or meat! I recommend oven roasted beef tenderloin! I have a separate recipe for this!
